Healthy Chocolate Chip Brownie Cookies (Vegan option!)
Simple chocolate chip cookies with the consistency of gooey brownies and the taste of Nutella! You can also make these cookies with vegan chocolate chips.
- 1 can of red kidney beans (rinsed and drained)
- 2 TS unsweatened cocoa powder
- 1 TS vanilla extract
- 2/3 cup hazelnut butter
- 1/3 cup honey (you can add more or less!)
- 1 ts baking powder
- 1 cup chocolate chips (I mixed different kinds of Belgian chocolate)
- A dash of milk (soy, coconut, almond,…)
Blend all the ingredients together, except for the chocolate chips. Add a really small splash of milk if the mixture is too hard to mix. Stir the chocolate chips into the bowl.
Now roll the dough into balls (the size of a big tablespoon) and press down with the back of a wet spoon. Bake at 180°C (350 fahrenheit) for about 12-18 minutes. The baking time depends on the size of the cookies. They are done when the outside is crispy, but the inside should still be a little sticky. Wait until these cookies have cooled down.
Tip: the dough tastes just like Nutella, so it’s also a good spread! ;)
